INGREDIENTS:
- 1/2 cup flour
- 4 sole fillets
- 3 tbsp olive oil
- 4 tbsp butter
- 1/3 cup lemon juice
- salt and pepper
- parsley to garnish
INSTRUCTIONS:
- Heat the olive oil and butter in a large skillet. Dredge each of the sole fillets in flour, making sure to shake off the excess. Then add the fillet to the skillet and let the magic begin. Flip the fish once the first side has turned a slight golden brown (about 4-6 minutes) Once the other side has browned remove the fillet and repeat for the other pieces of fish. Once all the fillets have been removed from the pan, add the lemon juice and let it heat through. Then pour the lemon sauce on top of the fish. Sprinkle some parsley on top of the fish and serve.
