Cauliflower Mashed Potatoes Recipe


INGREDIENTS:

  • 2 heads of cauliflower
  • ¼ cup olive oil (plus some extra to drizzle on top)
  • 1 ½ cups greek yogurt, unsweetened
  • salt and pepper to taste

INSTRUCTIONS:

  1. Chop cauliflower into florets and steam until soft, about 15 minutes
  2. Combine cauliflower, 1 cup yogurt, and olive oil, and mash together (you can use an electric mixer on low with a whisk attachment). Add in enough of the remaining yogurt to reach the desired consistency.
  3. Salt and pepper to taste. Add a drizzle of olive oil if desired and serve immediately.
