Yeung Chow Fried Rice Recipe


INGREDIENTS

2 cups of cooked rice
3 tbsp soy sauce
3 tbsp of green peas
3 tbsp of diced carrots
3 tbsp of corn
3 tbsp of spring onions, chopped
2 eggs
pepper to taste
1/3 cup of barbecued pork, diced

DIRECTIONS

  1.  Add 2 cups of water to a pot and bring it to a boil. Add in the carrots, corn, and peas. Allow them to blanch for 1 to 2 minutes.
  2. Add some vegetable oil to a pan over medium high heat. Add in the pork and saute it for 1 or 2 minutes.
  3. Add the vegetables in a saute them for 1 to 2 minutes. Season with soy sauce and pepper. Give everything a quick stir. Add the cooked rice in. Using two wooden spoons, break up the clumps of rice and toss everything together.
  4. Push the rice to one side of the pan. Slightly beat the eggs and pour it in. Allow it begin to set. Using yous spatula, slice it into small strips. Continue scrambling until it solidifies.
  5. Turn off the heat, add in the spring onions. Toss once again, serve, and enjoy your Yeung chow fried rice.
