Spicy Roasted Pumpkin Seeds Recipe


INGREDIENTS:

  • 4 cups of pumpkin seeds
  • 1 tablespoon of olive oil
  • 2 teaspoons of smoked paprika
  • 2 teaspoons of chili powder
  • 1 teaspoon of ground sea salt
  • ½ teaspoon of ground black pepper

INSTRUCTIONS:

  1. Preheat the oven to 385° and line a baking sheet with parchment paper
  2. Put enough water to cover the seeds in a pot and bring to a boil. Salt the water.
  3. Collect the seeds and rinse in a colander. Remove the excess pumpkin flesh. Put the seeds in the boiling water for 1 minute. Drain in the colander and let them cool. Blot the excess water with a paper towel.
  4. Put the seeds in a large bowl and add the oil and spices. Stir well to evenly coat.
  5. Spread the seeds out evenly on the baking sheet and bake for 4 minutes. Shake the pan to spread the seeds out. Bake for 4 minutes and shake again. Continue the process until the seeds are a light brown. This takes approximately 16 minutes.
  6. Let the seeds cool.
  7. Enjoy!
