Key Lime Chicken Tenders Recipe


INGREDIENTS:

  • 4 boneless, skinless chicken breasts
  • ½ cup butter, melted
  • 3 tbsp key lime juice (fresh squeezed or bottled)
  • 1 cup panko bread crumbs (Japanese-style bread crumbs)
  • ½ cup grated parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 tsp parsley
  • ½ tsp freshly ground black pepper
  • ½ dried oregano
  • ¼ tsp onion powder
  • ¼ tsp grated key lime zest

INSTRUCTIONS:

  1. In a small, wide bowl, mix together panko bread crumbs, grated parmesan, garlic powder, salt, pepper, parsley, oregano, onion powder.
  2. Cut boneless, skinless chicken breasts in half. (You could cut them into nugget size for little kids.)
  3. Mix together melted butter and key lime juice. Dip the chicken into the butter mixture.
  4. Then, coat the chicken tenders in the bread crumb mixture.
  5. Place them on a greased baking sheet and bake at 400 degrees for 20-25 minutes, until cooked through. You can flip the chicken tenders halfway through cooking to help brown both sides.
  6. Cook the chicken tenders under the broiler for a couple of minutes to make the tops more golden brown, if desired.
  7. Remove from the oven and sprinkle with a little grated key lime zest for added flavor.
