Asparagus And Goat Cheese Frittata Recipe


INGREDIENTS:

  • Olive oil - 3 tbsp
  • Onion - ¼ cup (thinly sliced)
  • Leek - ¼ cup (Thinly sliced)
  • Garlic - 1 tsp (chopped)
  • Eggs - 12
  • Salt to taste
  • Freshly ground black pepper - ½ tsp
  • Goat cheese - 50 g
  • Asparagus - 6-8

INSTRUCTIONS:

  1. Pre heat the oven to 180 degree C.
  2. Heat olive oil in an 8 inch Oven Proof, Non Stick Pan.
  3. Add onion, leek and garlic and fry till onions turns pinkish.
  4. Meanwhile whisk eggs in a bowl.
  5. Add salt and pepper in the eggs and whisk well.
  6. Crumble the Goat Cheese and add it in the eggs.
  7. Pour the eggs over the onions.
  8. Arrange the asparagus on top .
  9. Cook on medium heat for a minute.
  10. Transfer the pan in the pre heated oven and bake the frittata for about 10 minutes or until a skewer comes out clean.
  11. Serve hot with bread on the side.
