INGREDIENTS:
- Olive oil - 3 tbsp
- Onion - ¼ cup (thinly sliced)
- Leek - ¼ cup (Thinly sliced)
- Garlic - 1 tsp (chopped)
- Eggs - 12
- Salt to taste
- Freshly ground black pepper - ½ tsp
- Goat cheese - 50 g
- Asparagus - 6-8
INSTRUCTIONS:
- Pre heat the oven to 180 degree C.
- Heat olive oil in an 8 inch Oven Proof, Non Stick Pan.
- Add onion, leek and garlic and fry till onions turns pinkish.
- Meanwhile whisk eggs in a bowl.
- Add salt and pepper in the eggs and whisk well.
- Crumble the Goat Cheese and add it in the eggs.
- Pour the eggs over the onions.
- Arrange the asparagus on top .
- Cook on medium heat for a minute.
- Transfer the pan in the pre heated oven and bake the frittata for about 10 minutes or until a skewer comes out clean.
- Serve hot with bread on the side.
