INGREDIENTS:
- 1 package firm tofu
- 1 T sriracha
- 1 T honey
- 1/2 c fine cornmeal
- 1 t each of cumin and chili powder
- 1/2 t each of salt and garlic powder
- 1/8 t pepper
- 1/4 c oil
Sauce:
- 3 scallions
- 1 bunch cilantro
- 1/4 c yogurt
- warm tortillas
Toppings:
- grated cheese
- cubed avocado
- sliced onion
- sweet corn
- chopped tomato
INSTRUCTIONS:
- Use a sharp knife to cube the tofu. Toss into a bowl with sriracha and honey. Chill for half an hour.
- In another bowl, mix cornmeal, chili powder, cumin, garlic powder, salt and pepper.
- Coat the marinated tofu cubes in the cornmeal.
- Heat your skillet on medium high heat. Add a bit of oil and brown on both sides.
- In your food processor, puree the sauce ingredients.
- Place a warm tortilla on 4 plates. Top with your favorite toppings.
