- 3 cans (225g) bamboo shoot, washed and drained
- 2 tablespoons vinegar
- 5 tablespoons soy sauce
- ½ teaspoon ground black pepper
- 1 medium onion, chopped
- 3 cloves of garlic, minced
- 2 tablespoons cooking oil
- 100g pork rashers, sliced thinly
INSTRUCTIONS:
- In a mixing bowl mix together the bamboo shoot, ground black pepper, vinegar and soy sauce. Marinate for at least 30 minutes.
- In a medium to high heat, heat oil in a wok or pan and then add the garlic. Sauté the garlic until it turns light brown.
- Add the pork rashers and stir fry for about 5 minutes or until the pork is crispy.
- Add the bamboo shoot marinate. Stir to combine and cover, stirring occasionally until the liquid had evaporated.
- Transfer to a serving dish and serve with boiled or steamed rice.
