INGREDIENTS:
- 8 ounces of pasta
- 4 tablespoons oil, divided per the directions
- 2 zucchinis
- 4 cloves of garlic, minced
- Parmesan cheese
- fresh basil
- salt and pepper, to taste
INSTRUCTIONS:
- Cook the pasta according to the directions on the box. Drain it and set it aside.
- While the pasta is cooking, in a large skillet, on Medium heat, warm up 2 tablespoons of oil.
- Slice the zucchini into strips and add them to the skillet. Cook them until they are slightly tender.
- Add in the minced garlic and cook for about 30 seconds.
- Add in the cooked pasta, shredded Parmesan cheese, chopped basil,and remaining 2 tablespoons of oil and gently stir everything together.
- Add salt and pepper, to taste.
