INGREDIENTS:
- 1/2 cup couscous
- 1 cup hot boiling water
- 1 tsp ground cumin
- 1 tsp paprika
- Salt and Pepper to taste
- 1 medium red onion finely chopped
- 1 tomato finely chopped
- 1/4 cup fresh chopped coriander
- 1/4cup fresh chopped parsley
- 1 tbsp tomato ketchup
- 1 tbsp olive oil
- 1 tbsp lemon juice
INSTRUCTIONS:
- Put the couscous in a bowl. Add salt, pepper, ground cumin and paprika and mix well. Pour over the hot boiling water, Cover it with a plate or plastic wrap and leave to stand for 10 minutes.
- Mix the couscous with a fork. Stir in tomato ketchup and mix well.
- Add chopped vegetables and herbs and mix everything together.
- Stir in olive oil and lemon juice and mix again.
- Serve it as a side dish or as a snack or light meal.
