INGREDIENTS
- 1 lb. chicken legs and wings
- 1/4 c lemon juice
- 1/2 cup soy sauce
- 1 cup tomato sauce
- 1/2 medium size onion, chopped
- 4 cloves garlic, minced
- 3 potatoes, quartered
- bay leaf
- salt and pepper
- cooking oil
INSTRUCTIONS:
- Marinate chicken with lemon juice and 1/4 c soy sauce for 15-20 minutes.
- In a sauce pan, fry the potatoes and set aside.
- Then fry chicken until golden brown. Set aside.
- Saute onion and garlic in the same pan.
- Then add the chicken.
- Stir fry for few minutes.
- Add the tomato sauce, remaining soy sauce and water. Simmer for 20-25 minutes until the chicken is cooked through.
- Then add the potatoes and bay leaf. Simmer for another 5 minutes.
- Salt and pepper according to taste.
- Serve hot with steamed rice.
