Sausage Lasagna With A Bacon Topping Recipe



INGREDIENTS:

  • 1 lb box lasagna noodles
  • 1 pack of bacon
  • 2 cups mozzarella cheese, divided
  • 300 g ricotta cheese
  • 250 g cottage cheese
  • ¼ cup freshly grated Parmesan cheese
  • 1 egg
  • ¼ tsp. ground thyme
  • Salt and pepper

Sauce:

  • 1 large carrot, grated
  • 1 medium onion, diced
  • 1 celery stalk, diced
  • 1 red pepper, diced
  • 2 tsp. dried oregano
  • 1 tsp. dried basil
  • Salt and pepper
  • 1 (28 ounce) can diced tomatoes
  • 1 tbsp. tomato paste
  • 3-4 garlic cloves, minced
  • 2 tbsp. olive oil
  • 500 g sausages, sliced/chopped

INSTRUCTIONS:

  1. In a large frying/saute pan, add the olive oil and place over medium-high heat. Add the sausages and cook for 2 minutes. Stir in the carrots, onions, celery, and red pepper. Cook until the meat is browned. Stir in garlic and cook for two minutes.
  2. Add the tomato paste, oregano, basil, salt, and pepper. Cook for about 5 minutes. Stir in tomatoes and simmer for 30-40 minutes (you can shorten the time, but the longer you cook the sauce, the more flavourful the dish)
  3. While the sauce is simmer, bring a large pot of salted water to a boil. Add in the noodles and cook until al dente. Drain and rinse noodles: laying them somewhere that they do not stick together!
  4. In another medium-sized bowl, combine the ricotta, cottage cheese, Parmesan, egg, salt, pepper, thyme, and ¼ cup mozzarella cheese.
  5. Preheat oven to 350F. Place enough sauce in the bottom of a 9x13 inch casserole dish to just cover the bottom of pan. Layer first row of noodles and top with some sauce. Sprinkle with some mozzarella cheese. Layer more noodles, followed by sauce and the entire ricotta cheese mixture. Add another row of noodles, sauce, and mozzarella cheese until dish reaches the top. For the topping, use the rest of the sauce to completely cover the top layer of noodles. Add mozzarella cheese and top with enough bacon slices to cover completely. Add more Parmesan cheese or mozzarella if desired!
  6. Place, covered, into the oven for about 30-40 minutes. Remove lid and cook for another 10 minutes, broiling the bacon if desired. Allow to cool for 10-15 minutes before serving to ensure meal holds together!
