INGREDIENTS:
- Spicy Chicken Burgers
- 500g chicken mince
- 2 tbsp coriander leaves, chopped
- 2 spring onions finely sliced
- juice and zest of 1 lime
- 3 tbsp Sweet Chilli sauce
- 1 egg white
- salt and pepper
- 1/4 cup coconut cream
- 1 tbsp peanut oil for frying
- hamburger buns or Turkish bread, halved and sliced into serves
- 1/2 red onion finely sliced
- 1 small carrot, julienned finely
- 1 tbsp coriander leaves roughly chopped
- 1 tbsp mint leaves roughly chopped
- 1 handful rocket leaves roughly chopped
- 1 small continental cucumber, julienned finely
- sesame oil
- zest and juice of 1 lime
- 1 cup thick natural yogurt
- 2 tsp wasabi paste
- sea salt flakes to season
- To make the burgers combine all the ingredients except the oil in a large bowl and mix well. Divide the mixture into burger sized balls and roll and flatten slightly into patties. Place on a lined tray or plate and chill for 30 minutes.
- Heat the oil in a heavy fry pan over a medium high heat. Fry burgers until golden brown on both sides and cooked through.
- To make the Wasabi Yogurt Sauce combine all ingredients in a mixing bowl and use a metal whisk to combine to a smooth sauce.
- To make the Salad toss all the ingredients together in a bowl, drizzle a little sesame oil over the top and toss to coat.
- To assemble place a burger on the bottom bun and top with the salad. Spoon the Wasabi Yogurt Sauce over the top and finish with the top bun.
