Spicy Chicken Burgers With Wasabi Yogurt Sauce Recipe


INGREDIENTS:
  • Spicy Chicken Burgers
  • 500g chicken mince
  • 2 tbsp coriander leaves, chopped
  • 2 spring onions finely sliced
  • juice and zest of 1 lime
  • 3 tbsp Sweet Chilli sauce
  • 1 egg white
  • salt and pepper
  • 1/4 cup coconut cream
  • 1 tbsp peanut oil for frying
  • hamburger buns or Turkish bread, halved and sliced into serves
Salad
  • 1/2 red onion finely sliced
  • 1 small carrot, julienned finely
  • 1 tbsp coriander leaves roughly chopped
  • 1 tbsp mint leaves roughly chopped
  • 1 handful rocket leaves roughly chopped
  • 1 small continental cucumber, julienned finely
  • sesame oil
Wasabi Yogurt Sauce
  • zest and juice of 1 lime
  • 1 cup thick natural yogurt
  • 2 tsp wasabi paste
  • sea salt flakes to season

INSTRUCTIONS:
  1. To make the burgers combine all the ingredients except the oil in a large bowl and mix well. Divide the mixture into burger sized balls and roll and flatten slightly into patties. Place on a lined tray or plate and chill for 30 minutes.
  2. Heat the oil in a heavy fry pan over a medium high heat. Fry burgers until golden brown on both sides and cooked through.
  3. To make the Wasabi Yogurt Sauce combine all ingredients in a mixing bowl and use a metal whisk to combine to a smooth sauce.
  4. To make the Salad toss all the ingredients together in a bowl, drizzle a little sesame oil over the top and toss to coat.
  5. To assemble place a burger on the bottom bun and top with the salad. Spoon the Wasabi Yogurt Sauce over the top and finish with the top bun.
