Honey Lemon Glazed Oven Roasted Chicken Recipe


INGREDIENTS:

  • 10 boneless skinless chicken thighs
  • 1 large onion - thinly sliced
  • 3/4 cup dry white wine (not cooking wine)
  • 1 1/2 tsp. kosher salt
  • 1/2 tsp. black pepper
GLAZE:
  • 1/2 cup honey
  • juice and zest of 1/2 lemon
INSTRUCTIONS:
  1. Preheat oven to 375 F.
  2. Season the chicken thighs with the salt and pepper.
  3. Place the onions and wine in a large baking pan.
  4. Put the seasoned chicken thighs on top of the onions.
  5. In a small bowl whisk together the glaze ingredients.
  6. Brush some of the glaze over the chicken thighs and place on middle rack in oven to bake uncovered for 1 hour.
  7. Brush with more glaze every 20 minutes.
  8. After 1 hour of baking and glazing, place
  9. the chicken under the broiler for about 4 minutes to brown.
  10. Serve warm with the onions and a green veg or mashed potatoes.
