Mochi Brownies Recipe


INGREDIENTS:
  • 1/2 cup mochiko
  • 1/3 cup sugar
  • 1/2 cup water
  • 1/4 cup cornstarch
  • 1 cup flour
  • 3/4 teaspoon salt
  • 1/4 teaspoon baking soda
  • 2/3 cup butter
  • 1/3 cup oil
  • 1 1/4 cup sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 teaspoon vanilla
  • 4 eggs

INSTRUCTIONS:
  1. Preheat oven to 350 degrees. Grease an 9x9 inch baking pan with oil.
  2. To make the mochi, combine the mochiko, 1/3 cup sugar and water in a microwave safe bowl and mix well.
  3. Microwave the mochi dough for 30 second intervals, stirring in between each interval, until the dough holds its shape.
  4. Scrape the mochi dough onto a surface coated with cornstarch. Divide into 9 small balls with a knife. Flatten the balls with your hands, then dust with more cornstarch to prevent from sticking together. Transfer to a plate and set aside.
  5. To make the brownies, melt the butter in a microwave safe bowl. Transfer to a mixing bowl and combine with the oil, sugar, cocoa powder, vanilla and eggs. Stir until combined. Add the flour, salt and baking soda and stir until well blended.
  6. Pour half the batter into the baking pan, then lay the mochi across the top. Pour the remaining batter on top, then smooth our with a spoon.
  7. Bake in the oven for 30-35 minutes. Let cool fully, then cut into individual slices. You may need to clean the knife in between cuts if the mochi is very sticky!
