INGREDIENTS:
- 3 large hard boiled eggs
- 1/2 tub (60g) natural Coyo yogurt
- 1/2 tbsp lemon juice
- 1/2 tbps finely chopped chives
- 1 spring onion finely chopped
- 1 tsp Dijon mustard
- 1/4 tsp Pink Himalayan Rock Salt
- 1/4 tsp Black pepper
- Large lettuce leaves to serve; I used Cos
INSTRUCTIONS:
- Chop and lightly mash hard-boiled eggs.
- Mix together Coyo, mustard, lemon juice, salt and pepper.
- Add all salad ingredients to a bowl and mix well to combine. Season to your own taste with a little more salt and pepper if desired.
- Serve up in large lettuce leaves or eat it straight from the bowl!
