- 1 large chicken breast
- 2 tbsps olive oil
- 2 tbsps honey OR agave nectar
- 3 tbsps soy sauce
- 1/4 tsp garlic powder OR 1 whole clove, minced
- 1/8 tsp black pepper
- 2 cups frozen vegetables
- 1 cup rice, cooked and drained
- 2 tsps cornstarch
- 1 tbsp water
- Put 1 cup of dry rice into a small pot and cover with water. Boil. Keep an eye on it while you work on the rest of this.
- On medium heat, heat the olive oil and then brown the chicken in it. Don't worry if it's still slightly pink, it will get cooked some more.
- In a small container, mix together honey, soy sauce, garlic, and pepper. Put it on top of the chicken and let it simmer for a minute.
- Add the frozen vegetables. I used green beans (which goes very well) and cook them until they are completely heated through. Then, in a small container, mix together the cornstarch and water until it is completely blended. Add it to the chicken and vegetables and stir.
- Serve the chicken and vegetables over the rice. Enjoy!
