Poor Man’s Pancit (Pansit) Recipe


INGREDIENTS

12 oz rice noodles
5 garlic cloves, minced
2 tbsp Olive Oil
1 small onion
1 large carrot (cut into matchsticks)
1 cup shredded cooked chicken
1/4 cup soy sauce
Cabbage (I used spinach because this is all I had)
Wedges of lime

DIRECTIONS

  1. Soak Noodles in warm water for about 15 minutes.
  2. While doing that, cut up your carrots and onions
  3. Heat oil in medium-high heat.
  4. Saute onion and garlic until soft.
  5. Add cabbage, carrots, chicken and soy sauce.  Mix until cabbage is soft.
  6. Add noodles and mix.  Heat for about 3 minute.
  7. Serve with lime.
