Chipotle Seasoned Rice Recipe


INGREDIENTS:

  • 1 cup uncooked rice
  • 2 ¼ cup vegetable broth
  • 1 teaspoon paprika
  • ½ teaspoon chipotle powder
  • 1 teaspoon garlic powder
  • 1/4 teaspoon cumin
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil, or light tasting oil of your choice

INSTRUCTIONS:

  1. Combine all ingredients in a medium pot, and place over high heat. Cover, bring to a boil, and reduce heat to low, simmering for twenty minutes. Top with chives or cilantro if desired.
