Shrimp-Stuffed Peppers Recipe


INGREDIENTS

1 lb 2 oz raw shrimp, peeled, deveined, and finely chopped
10 1/2 oz ground lean pork
1 tsp salt
3 scallions, finely chopped
3 tbsp water chestnuts, finely chopped
3 tsp soy sauce
2 tsp dry sherry
1 tbsp oil
3 bell peppers, assorted colors

DIRECTIONS

  1. Mix together the shrimp, pork, salt, scallions, water chestnuts, soy sauce, and dry sherry. 
  2. Cut the peppers lengthwise into 3-4 segments and remove the seeds and membrane. 
  3. Fill the pepper wedges with shrimp filling and cut in half. Heat the oil in a wok. 
  4. Cook the pepper pieces in two batches over medium-high heat for 3-4 minutes, or until well browned. 
  5. Turn over and cook for another 3 minutes; repeat with remaining pepper pieces. Serve immediately.
