Cherry Walnut Granola Recipe


INGREDIENTS

2 cups rolled oats
1 cup chopped walnuts
1/2 cup sweetened flaked coconut
1/4 cup wheat germ
14 cup flaxseed meal
1/2 cup honey
2 Tbsp canola oil
1/2 Tbsp ground cinnamon
1 tsp pure vanilla extract
I cup dried tart cherries

DIRECTIONS

  1. Preheat the oven to 300 degrees. Spray a large baking sheet with non-stick cooking spray and set aside. 
  2. In a large bowl combine the oats, walnuts, coconut, wheat germ and flaxseed meal and mix well. In a separate small bowl whisk together the honey, oil, cinnamon and vanilla. Pour the liquid mixture over the oats and use a silicone spatula to mix well and combine. 
  3. Spread the oat mixture into the prepared pan in an even layer. Bake for 30-35 minutes or until golden brown, stirring after 20 minutes. Once the granola is done cooking, mix in the dried cherries. Spread the cooked granola onto a piece of parchment paper or a separate baking sheet to cool. Store in an airtight container at room temperature.
