Filipino Chicken Vermicelli Recipe


INGREDIENTS

1/4 cup oil
8 garlic cloves, minced
1 large onion, diced
1 chicken breast, boiled and sliced
10 dried black Chinese mushrooms, soaked in warm water, drained, and thinly sliced
3 cups chicken stock
1/2 small carrot, cut into matchsticks
1/2 leek, cut into matchsticks
1 bunch Chinese celery leaves, thinly sliced
6 oz dried glass noodles, soaked in water for 10 mins then cut into lengths
1 1/2 tbs fish sauce
pepper to taste

DIRECTIONS

  1. Heat oil in a wok and stir-fry garlic until golden, then add onion and stir-fry until translucent.  
  2. Add chicken and mushrooms, stir-frying for another 2 minutes.  
  3. Add stock and bring to a boil, then add carrot, leek, and celery leaves and cook for 3 more minutes.  
  4. Add noodles and cook for 3 minutes, seasoning with fish sauce and pepper.  
  5. Remove from heat and transfer to a serving dish. 
  6. Serve hot.
