INGREDIENTS
3 cups chopped seedless watermelon
2 cups cucumber coins
1 cup crumbled feta cheese
Dressing:
10 mint leaves, finely chopped
1/8 cup extra virgin olive oil
2 tablespoons lemon juice
Salt and pepper
DIRECTIONS
- Combine watermelon, cucumber and feta in a salad bowl. Sprinkle with salt and return to the fridge for 15 minutes or up to 30 minutes.
- Assemble the dressing by whisking together the mint, oil, lemon juice and salt and pepper together.
- Toss with watermelon salad and serve immediately.
