Watermelon And Feta Salad Recipe


INGREDIENTS

3 cups chopped seedless watermelon
2 cups cucumber coins
1 cup crumbled feta cheese

Dressing:

10 mint leaves, finely chopped
1/8 cup extra virgin olive oil
2 tablespoons lemon juice
Salt and pepper

DIRECTIONS

  1. Combine watermelon, cucumber and feta in a salad bowl. Sprinkle with salt and return to the fridge for 15 minutes or up to 30 minutes.
  2. Assemble the dressing by whisking together the mint, oil, lemon juice and salt and pepper together.
  3. Toss with watermelon salad and serve immediately.
