INGREDIENTS:
- 3 very ripe bananas
- ½ cup vegetable oil
- 2 large eggs (or 1/2 cup yogurt as an egg substitute)
- 150 grams soft light brown sugar or regular sugar
- 1 ½ cups all-purpose flour
- 3 tablespoons best-quality cocoa powder (sifted)
- 1 teaspoon baking soda
INSTRUCTIONS:
- Preheat the oven to 200°C and line a 12-bun muffin tin with muffin liners or cupcake liners.
- Mash the bananas with a fork until smooth paste and no lumps in it.
- Add oil, sugar and eggs (or yogurt). Combine everything together with a spatula or whisk.
- Add all purpose flour, cocoa powder and baking soda and mix everything together.
- Spoon it into the prepared muffins tray evenly just like you spoon cupcakes.
- bake for 15-20 mins or until the skewer comes out clean when you check the muffins. cool them down completely before serving. They will be delicious dark brown dairy free chocolate banana muffins.
