Mango Barbecued Pork Chops Recipe


INGREDIENTS:

  • 1 1/2 cups chopped mango
  • 1/2 cup ketchup
  • 1/4 cup cider vinegar
  • 1/8 cup brown sugar
  • 1/8 cup honey
  • 1 tablespoons smoked paprika
  • 1 tablespoon onion powder
  • 2 teaspoons chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon liquid smoke
  • 1/4 teaspoon cayenne pepper
  • 1 pound lean pork chops

INSTRUCTIONS:

  1. Combine first 11 ingredients (mango through cayenne pepper) in a small saucepan. Bring to a boil and simmer 15 to 20 minutes or until the mango is tender and easily mashed. Remove from heat and allow to cool to room temperature.
  2. Once cooled, pour the mango mixture into a food processor or blend and process until smooth.
  3. Preheat a grill on medium-high heat. Baste the chops with the barbecue sauce and place the pork on the grill. Cook 3 minutes, turn 45 degrees and cook 3 minutes more. Turn the chops and repeat.
  4. Remove the pork from the grill and allow to rest 5 minutes before drizzling with additional sauce and served with grilled corn and pineapple couscous.
