INGREDIENTS:
- 400g/1lb king prawn tails
- 300g/10 oz rice noodles
- 1 cup and a half coconut milk
- 2 garlic cloves, crushed
- 1 tbsp butter
- 1 tsp ginger
- salt
- fresh coriander leaves
INSTRUCTIONS:
- Heat a pan with butter and gently sweat the garlic for 5 minutes. Add the ginger and then the prawn tails.
- Cook them for another 5 minutes and gently pour in the coconut milk. Stir in the noodles.
- Leave on the hob, stirring constantly until the noodles have soaked up the coconut milk(about 10 minutes). Season with salt.
- Serve with fresh coriander leaves.
