Crispy Tilapia Strips with Pineapple-Orange Marmalade Sauce

INGREDIENTS:

  • Tilapia - 2 pieces about 500 grams- filleted and sliced into strips
  • Vegetable oil for deep-frying
Coating :
  • Cornstarch - 1 c
  • Salt to taste
  • Black Pepper Powder - 1/4 tsp
  • White Pepper Powder - 1/4 tsp
  • Garlic Powder - 1/2 tsp
  • Onion Powder - 1/2 tsp
Pineapple-Orange Marmalade Sauce:
  • Pineapple Juice - 1 c
  • Orange Marmalade - 1/2 c
  • Black Pepper Powder - a dash
  • White Pepper Powder - a dash
  • Salt to taste
  • Garlic, minced - 3 cloves
  • Onions, sliced into rings - 1 med
  • Cornstarch - 2 tsp
  • Water - 1 tsp
  • Vegetable oil
INSTRUCTIONS:
  1. Make sure that the tilapia strips are dry. Pat them with paper towels.
  2. Mix all the ingredients for the coating. Dredge the tilapia strips with the coating
  3. Heat the oil under medium fire then deep fry the tilapia until they turn brown and crispy. Transfer the fried tilapia into a plate lined with paper towels
for the Pineapple-Orange Marmalade Sauce:
  1. Heat oil in a sauce pan and saute the garlic then the onions for a few minutes.
  2. Pour the pineapple juice and orange marmalade then season with the black and white pepper powders, and salt. Let the sauce simmer for about a minute.
  3. Dissolve the cornstarch in water and pour it into the mixture. Bring the sauce to simmer and cook under low fire until the sauce thickens.
