INGREDIENTS:
- 500 grams beef sirloin, cut thinly
- 2 Tbsp Dark soy
- 1 Tbsp Kikkoman
- 3 pcs Calamansi (you can substitute 1/3 of a lemon)
- 1 tsp olive oil
- 7 cloves garlic
- 2 pcs onions, sliced into rings
- To taste freshly cracked black pepper
- 1/4 to 1/2 cup water
INSTRUCTIONS:
- Bring thinly sliced sirloin to room temperature. Set aside as you prepare the marinade.
- In a bowl, combine the 2 soy sauces, calamansi, pepper and olive oil and stir to combine. I like to mix all my marinades in a separate bowl before adding it to any meat mixture.
- Using a mortar and pestle, pound 7 cloves of garlic. I added a little rock salt to help pulverize it.
- Add garlic to the Soy marinade.
- Pour marinade over beef and mix well. I marinated this for about 2 hours.
- Slice onions into rings and pan fry until golden. Set aside.
- Heat olive oil in a pan and add onions. I seasoned them lightly with salt and pepper. Keep the flame on low heat and allow to caramelize. Set aside.
- Pan fry beef in olive oil until browned making sure not to overcook your meat so it doesn’t get tough.
- Place the leftover marinade into the pan and add 1/4 to 1/2 cup water. Swirl the pan and adjust seasoning. Pour over cooked beef and top with caramelized onions. Serve. ENJOY!
