Stuffed Calamari Recipe


INGREDIENTS:

  • 3 big calamari (squids), cleaned
  • 1/4 cup extra virgin olive oil
  • 1/2 cup white wine
  • 1-1/2 cup tomato juice
Stuffing:
  • 1/4 cup olive oil
  • 1 onion, finely chopped
  • 5 cloves garlic, crushed
  • squid tentacles, chopped
  • 10 pcs peeled & deveined shrimp, chopped
  • 1/2 cup sticky rice, half-cooked
  • 2 tomatoes, chopped
  • parsley, finely chopped
  • 1/4 cup pine nuts
  • 1/4 cup raisins
  • 10 pcs green olives
  • salt
  • freshly ground black pepper
  • chilli flakes
INSTRUCTIONS:

To clean calamari:

  1. Pull away the insides, including the quill, from the body.
  2. Wash the tubes thoroughly and remove the outer skin. You may use salt to make the task easier.
  3. Rinse again and dry on paper towels.
  4. Set aside.
To make stuffing:
  1. Heat the oil in a large frying pan.
  2. Add garlic and onion and cook until soft but not browned.
  3. Add tentacles, shrimp, rice, tomatoes, pine nuts, raisins and, parsely.
  4. Season with salt and pepper. Stir to combine.

1. Fill the calamari with three-quarters full stuffing, leaving room for rice to swell.
2. Close the open end using a toothpick.
3. Heat oil in frying pan. Fry calamari over high heat for 2-3 minutes.
4. Arrange the calamari in a pot. Add white wine and tomato juice. Simmer for 30 minutes.
5. Remove the calamari from the pot and reserve sauce.
6. Bring the reserved sauce to boil. Leave for 10 minutes or until sauce thickens. Season to taste.
7. You may opt to grill the calamari to keep it warm and turn its color to light brown.
8. Serve calamari, thickly sliced, with the sauce.
