INGREDIENTS:
- 1 lb (500 g) Dulum (baby fish)
- Juice of 10 calamansi (juice of one lime)
- 3 medium tomatoes cut into quarters
- 2 cloves of minced garlic
- 1 banana leaf 12″ X 12″
- coconut oil (olive oil will do)
- Salt & Pepper
INSTRUCTIONS:
- Wash the dulum & drain in a colander, set aside
- Fry garlic till fragrant then add the dulum cook 2 min then season with salt & pepper
- turn off the fire and add the juice, stir until well mixed
- move the fish onto the banana leaf, top it with the quartered tomatoes
- wrap it in the banana & place in an oiled Frying Pan with lid
- Cook over low heat for 15-20 min
- garnish with sliced calamansi (lime wedges)
