- 300 to 350 grams Small Squids, cleaned and cut into halved
- 2 Tbsp All-Purpose Flour
- 1/4 tsp Baking Powder
- A Big Pinch of Sea Salt
- 2 to 3 tsp Peanut Oil
- 1/2 Cup Corn Starch or Potato Starch
Magic Salt
- 1/2 tsp Sea Salt
- 1/2 tsp Ginger Powder
- 1/2 tsp Chicken Powder
- 1 tsp 5-Spice Powder
- 1/2 tsp White Pepper
- 1/4 tsp Garlic Powder
- 1/4 tsp Onion Powder
Aromatic
- 2 to 3 Cloves Garlic, chopped
- 1/2 Green + 1/2 Red Chilies, chopped (or any color)
- 3 Scallions, chopped
- A couple of Pinches of “Magic Salt”
INSTRUCTIONS:
- Make the “Magic Salt”: Combine all the ingredients in a jar or container. Close with a lid and shake well.
- Combine the squids with flour, baking powder, sea salt and peanut oil. Mix until well combine. Then coat it with corn starch and shake-off excess starch.
- Heat the oil over medium to high heat. Deep-fry all the squids until crispy and golden in color. Remove and drain well on a wire strainer or paper towel. Set aside.
- Lightly oiled a pan or wok over high heat. Toss in the garlic, chilies, scallions. Stir-fry until fragrant. Toss in the squids. Mix well and sprinkle some “Magic salt”, toss well and serve immediately.
