INGREDIENTS:
- 500 grams Prawns cleaned, deveined
- 2 pcs Eggs medium
- 2 tbsp Fresh Milk (optional)
- 1-2 cups Cooking Oil (varies depend how big is your pan)
- 3/4 cup Flour
- 1/2 tsp Salt
- 1/2 tsp black peppercorns ground
- 3 tbsp Butter
- 20 pcs Curry leaves small size
- 80 grams Cereal Prawn
- 1 piece Red Chili sliced
INSTRUCTIONS:
- Clean the prawns (see the notes below).
- Mix the egg and milk. Add the prawns and soak for 2-3 minutes. Season with salt and pepper.
- In a bowl, mix the flour, salt and pepper. Put each prawn to the flour mixture to coat.
- Heat the cooking oil to medium, once hot put one by one of the prawns, 4 prawns at a time in a pan. They shouldn't be crowded. Give a little space to each so they cook nicely. Cook until the prawns start to light brown. Take each cooked prawns and put on a paper towel to drain the excess oil. Cook by batches.
- Heat another pan, add the butter. Saute the chili. Add the curry leaves for 30 seconds and add the cereal prawn.
- Add the battered crunchy prawns mixed with the cereal prawn. Stir for few seconds. Turn off the heat.
- Transfer to a platter. There you have it. Enjoy!
