INGREDIENTS:
- Butter2 tbsp
- Onion2, finely chopped
- Garlic1 clove, finely chopped
- Chili pepper1, cut into rings
- Potato300 g floury, peeled and cubed
- Cornflour2 tbsp
- White wine100 ml
- Vegetable stock500 ml
- Milk300 ml
- Bay4 fresh leaves
- Sweetcorn400 g, frozen or tinned
- PepperFreshly milled
- Salt
- Melt the butter in a pan.
- Add the onions, garlic, chilli and potatoes and sweat for a few minutes.
- Add the cornflour and stir to coat.
- Pour in the white wine and the vegetable stock, bring to a boil and simmer for about 20 minutes.
- Pour in the milk and add the bay leaves and the sweetcorn.
- Simmer gently for a few minutes, then season to taste with salt and pepper and serve.
