Sweetcorn Soup With Chili



INGREDIENTS:

  • Butter2 tbsp
  • Onion2, finely chopped
  • Garlic1 clove, finely chopped
  • Chili pepper1, cut into rings
  • Potato300 g floury, peeled and cubed
  • Cornflour2 tbsp
  • White wine100 ml
  • Vegetable stock500 ml
  • Milk300 ml
  • Bay4 fresh leaves
  • Sweetcorn400 g, frozen or tinned
  • PepperFreshly milled
  • Salt
INSTRUCTIONS:

  1. Melt the butter in a pan.
  2. Add the onions, garlic, chilli and potatoes and sweat for a few minutes.
  3. Add the cornflour and stir to coat.
  4. Pour in the white wine and the vegetable stock, bring to a boil and simmer for about 20 minutes.
  5. Pour in the milk and add the bay leaves and the sweetcorn.
  6. Simmer gently for a few minutes, then season to taste with salt and pepper and serve.
