Asian Sesame Edamame Salad



INGREDIENTS:
  • 2 carrots, spiralized
  • 2 green zucchini, spiralized
  • 2 cups cooked edamame
  • 1 garlic clove minced
  • 1 tsp minced ginger
  • ¼ cup olive oil
  • 1 tbsp sesame oil
  • 2 tbsp rice vinegar
  • 3 tbsp soy sauce
  • 1½ tbsp honey
  • 1 tbsp sesame seeds
  • chopped green onion

INSTRUCTIONS: 
  1. Combine the prepared vegetables in a large bowl. Set aside.
  2. To make the dressing, whisk together the minced garlic clove, minced ginger, olive oil, sesame oil, rice vinegar, soy sauce, honey, and sesame seeds. 
  3. Pour the dressing over the vegetables and toss to combine. Top with chopped green onion for garnish!
