INGREDIENTS:
- 2 cups mung beans
- 2 cups glutinous sweet rice
- 1 cup coconut milk
- 1 cup coconut cream
- 5 tablespoons sugar
INSTRUCTIONS:
- Put the mung beans in a skillet. Cook until brown and crisp.
- Crush the beans with a rolling pin. 3
- Combine and mix the beans and the glutinous sweet rice.
- Simmer the mixture in coconut milk in a medium pot over moderate heat for 25 minutes. Remove from heat.
- Add the coconut cream and sugar to taste.
- Enjoy your ginataang munggo! This Filipino dish is best served while its hot (some prefer to eat it when its out of the fridge or cold).
