INGREDIENTS:
- 1 ½ cups (about 1 lb.) shredded chicken
- 1 celery stalk, chopped finely
- 2 T. mayonnaise
- 2 T. greek yogurt
- 2 T. pineapple preserves
- S&P to taste
- ½ t. dill
- 30 red grapes, sliced in half
- ¾ c. chopped pecans, roasted (about 4-5 min. in a 325 degree oven)
- Lettuce leaves or sandwich bread
- Combine first 7 ingredients in a medium bowl until well mixed.
- Lastly add in grapes and pecans and lightly toss.
- Serve in lettuce leaves or on bread for a sandwich. Enjoy!
