Pineapple Pecan Chicken Salad Recipe


INGREDIENTS:

  • 1 ½ cups (about 1 lb.) shredded chicken
  • 1 celery stalk, chopped finely
  • 2 T. mayonnaise
  • 2 T. greek yogurt
  • 2 T. pineapple preserves
  • S&P to taste
  • ½ t. dill
  • 30 red grapes, sliced in half
  • ¾ c. chopped pecans, roasted (about 4-5 min. in a 325 degree oven)
  • Lettuce leaves or sandwich bread
INSTRUCTIONS:
  1. Combine first 7 ingredients in a medium bowl until well mixed.
  2. Lastly add in grapes and pecans and lightly toss.
  3. Serve in lettuce leaves or on bread for a sandwich. Enjoy!
