INGREDIENTS:
- 4 granny smith apples
- 1 cup light brown sugar
- 8 sheets spring roll wrapper
- oil for frying
- Peel, core apples. Slice thinly. Divide into 8 equal parts.
- Place one part onto center of spring roll wrapper. Sprinkle with approx 1 tbs brown sugar (or more if required). Roll (like spring rolls). Repeat with the rest and set aside.
- Heat cooking oil on high. When hot enough, fry apple rolls quickly (abougt 3 minutes each side) until light brown. Drain on paper towels or rack.
- Serve warm.
