INGREDIENTS:
- Grilling spray
- 4 Mahi Mahi fillets
- Cajun seasoning:
- 1/8 teaspoon garlic powder
- 1/4 teaspoon paprika
- 1/8 teaspoon onion powder
- 1/8 teaspoon salt
- 1/8 teaspoon cayenne pepper
- 1/8 teaspoon dried oregano
- 1/8 teaspoon thyme
- Salsa
- 2 slices fresh pineapple
- 1 can Ro*Tel® Original Diced Tomatoes & Green Chilies, drained
- 2 tablespoons red onion, chopped
- 2 tablespoons lime juice
- 1 tablespoon fresh mint leaves, chopped
INSTRUCTIONS:
- Spray your cold grill grates with grilling spray. Preheat grill to medium-high heat.
- Sprinkle Mahi Mahi with Cajun seasoning. Place fish and pineapple slices on your grill. Cook Mahi Mahi and pineapple for 3 minutes on each side; only turning once.
- Chop grilled pineapple slices. In a small bowl, combine chopped pineapple with drained tomatoes, chopped onion, lime juice and mint. Serve pineapple salsa over Mahi Mahi.
