Grilled Mahi Mahi Fillets Recipe


INGREDIENTS:
  • Grilling spray
  • 4 Mahi Mahi fillets
  • Cajun seasoning:
  • 1/8 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 1/8 teaspoon onion powder
  • 1/8 teaspoon salt
  • 1/8 teaspoon cayenne pepper
  • 1/8 teaspoon dried oregano
  • 1/8 teaspoon thyme
  • Salsa
  • 2 slices fresh pineapple
  • 1 can Ro*Tel® Original Diced Tomatoes & Green Chilies, drained
  • 2 tablespoons red onion, chopped
  • 2 tablespoons lime juice
  • 1 tablespoon fresh mint leaves, chopped

INSTRUCTIONS:
  1. Spray your cold grill grates with grilling spray. Preheat grill to medium-high heat.
  2. Sprinkle Mahi Mahi with Cajun seasoning. Place fish and pineapple slices on your grill. Cook Mahi Mahi and pineapple for 3 minutes on each side; only turning once.
  3. Chop grilled pineapple slices. In a small bowl, combine chopped pineapple with drained tomatoes, chopped onion, lime juice and mint. Serve pineapple salsa over Mahi Mahi.
