Pancit Bihon Recipe

INGREDIENTS:
  • 1 pack (500g) Golden Bihon
  • 1/4 cup vegetable oil
  • 1/4 cup green onion or scallions, finely chopped
  • 1/4 cup red onion, minced
  • 1 cup chicharo
  • 1 cup carrot cut in strips
  • 1 cup fresh celery
  • 1 tablespoon garlic, minced
  • 1/2 small cabbage, chopped
  • 1/4 kilo shredded boiled chicken
  • 1 cup stir fried shrimps
  • 2 hard boiled eggs,sliced
  • 10 cups chicken soup stock used for boiling the chicken
  • 1 tablespoon annatto powder
INSTRUCTIONS:
  1. In a deep dish, soak rice noodles in water for about 2 to 3 minutes or until just softened and drain well.
  2. In a large pot, Saute the garlic and red onion.
  3. Add the carrots, fresh celery, chicharo, green onions and cabbage. Continue stir frying until the vegetables are tender. Set aside.
  4. Add color to the chicken stock with annatto powder or achuete. Boil the chicken stock.
  5. Add the drained noodles. Continue stirring and let the noodles absorb the stock.
  6. Add the veggies and continue stirring, then add the shredded chicken and shrimps.
  7. Cook until the noodles are tender. Prepare with calamansi.
  8. Serve
