INGREDIENTS:
- 1 pack (500g) Golden Bihon
- 1/4 cup vegetable oil
- 1/4 cup green onion or scallions, finely chopped
- 1/4 cup red onion, minced
- 1 cup chicharo
- 1 cup carrot cut in strips
- 1 cup fresh celery
- 1 tablespoon garlic, minced
- 1/2 small cabbage, chopped
- 1/4 kilo shredded boiled chicken
- 1 cup stir fried shrimps
- 2 hard boiled eggs,sliced
- 10 cups chicken soup stock used for boiling the chicken
- 1 tablespoon annatto powder
- In a deep dish, soak rice noodles in water for about 2 to 3 minutes or until just softened and drain well.
- In a large pot, Saute the garlic and red onion.
- Add the carrots, fresh celery, chicharo, green onions and cabbage. Continue stir frying until the vegetables are tender. Set aside.
- Add color to the chicken stock with annatto powder or achuete. Boil the chicken stock.
- Add the drained noodles. Continue stirring and let the noodles absorb the stock.
- Add the veggies and continue stirring, then add the shredded chicken and shrimps.
- Cook until the noodles are tender. Prepare with calamansi.
- Serve
