INGREDIENTS:
- 3 cups flour ( I used Jules gluten free flour)
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/4 cup (4 Tablespoons) cold butter
- 1 pound pork sausage (I used Jimmy Dean regular)
- 8 ounces (2 cups) shredded cheddar cheese
- 1-1/2 cups buttermilk
- Mix together flour, baking powder, and salt. Cut butter into flour mixture with a pastry blender.
- Add pork, cheese, and buttermilk.
- Stir to mix (I ended up using my hands.)
- Scoop with a medium cookie scoop (mine was 3 Tablespoons) and roll into balls. The pork lets loose a lot of grease but my balls still stuck a little so I think I will try to grease next time
- Bake at 400 degrees for 15-20 minutes or until light brown. I split one open at 15 and it was fully cooked through. When balls are done baking drain the pan. Remove to a paper towel so soak up a little more grease. Serve right away or at room temp.
