INGREDIENTS:
- 1 tablespoon olive oil
- 1 onion, julienne cut
- 6-8 small carrots, quartered lengthwise
- 2 cups chicken stock
- 1 small head green cauliflower, broken into florets
- 6-8 Tyson® Lightly Breaded Strips
- 1 handful green beans
- 1 cupful fresh peas
- salt and pepper
INSTRUCTIONS:
- Heat the olive oil in a large skillet over medium flame.
- Cook the onion until softened. Add the chicken stock.
- Carefully add the cauliflower florets and cook for 3-5 minutes.
- Arrange the chicken strips in the skillet. Season to taste.
- Cover the skillet with a lid and cook for 3 minutes.
- Add the green beans and peas as well and continue to cook for an additional 3-5 minutes or until the vegetables are cooked and the chicken is heated through.
- Sprinkle fresh dill over the dish.
- Serve warm with crusty bread. (optional)
