INGREDIENTS:
- 2 tablespoons olive oil
- 4 skinless chicken breasts
- salt and pepper, to taste
- 1 pint grape tomatoes, sliced in half
- 1 clove garlic, minced
- 8 ounces mozzarella cheese
- 1 handful fresh basil
- 4 tablespoons balsamic glaze
- 1 pound cooked pasta
INSTRUCTIONS:
- Preheat oven to 450F or broil.
- Heat a saute pan with olive oil.
- Season the chicken breasts with salt and pepper, and cook on both sides. Once halfway cooked, add the grape tomatoes and garlic.
- Top with mozzarella slices and place in oven for 5 minutes, until tomatoes soften and mozzarella gets golden brown.
- Serve with fresh basil and a drizzle of balsamic glaze over hot pasta.
