INGREDIENTS:
- 4 lbs chicken wings
- 2 tablespoons canola oil
- 1 tablespoon salt
- 1 tablespoon pepper
- Cherry Lime Glaze
- 1 cup cherry jam, I used Smucker's Natural Red Tart Cherry Spread
- 2 tablespoons fresh lime juice
- 2 tablespoons Cherry coke
- 1/2 tablespoon lime zest
INSTRUCTIONS:
- Preheat oven to 450°
- Cover a sheet pan with aluminum foil and place a wire rack inside. Coat with cooking spray. Set aside.
- In a large bowl, combine wings with oil, salt and pepper and toss to combine.
- Place wings onto wire rack and bake in oven for 45 minutes or until crispy and brown.
- While wings are baking, in a large bowl, combine cherry jam, lime juice and cherry coke. Transfer 1/4 cup of glaze to a small bowl.
- When the wings are crispy, remove from oven and and toss into large bowl with glaze. Place back onto wire rack and bake for an additional 10 minutes.
- Remove wings from oven and brush with 1/4 cup remaining glaze. Top with lime zest, if desired.
