INGREDIENTS:
- 20 oz chicken breasts, cut into cubes
- 1 tbsp cornstarch
- 1 tbsp fish sauce
- peanut or sesame oil
- 1 c sliced onions
- 2 tsp fresh garlic, minced
- 1 tsp fresh ginger
- 3/4 c coconut milk
- 1 tbsp sriracha (optional, can substitute a dash of crushed red pepper for a milder flavor)
- 1 tbsp sugar
- 1 tbsp fresh lime juice
- 2 tbsp cilantro, minced
- extra lime juice, optional
INSTRUCTIONS:
- Combine chicken and cornstarch and fish sauce together in a plastic bag and thoroughly coat chicken. Heat 1-2 tbsp of oil in skillet and add chicken. Sauté about 7 minutes and then remove.
- Heat 1 tbsp oil in the same skillet and add onions. Saute for about 6 minutes, stirring often, then add garlic and ginger. Saute for 1 minute. Stir in coconut milk, sriracha, sugar and lime juice. Cook for about 1 minute on med heat. Add chicken back in and mix.
- Serve with rice and sprinkle cilantro on top. Top with a squeeze of lime juice, if desired.
