Hawaiian Chicken Salad Recipe


INGREDIENTS:

  • 2 1/2 cups of cooked chicken cut into bite sized pieces
  • 1 14 ounce can of pineapple tidbits, drained
  • 1 cup of chopped celery, sliced cucumber or jicama
  • 3 tablespoons of salad oil
  • 2 tablespoons of lemon juice
  • 1/4 teaspoon of sea salt
  • 5 tablespoons of mayonnaise

INSTRUCTIONS:

  1. Mix the chicken, pineapple, celery, oil, lemon juice and salt in a mixing bowl for 2 hours
  2. Before serving, mix with the mayonnaise. Serve on buns or in lettuce cups
