INGREDIENTS:
- 2 1/2 cups of cooked chicken cut into bite sized pieces
- 1 14 ounce can of pineapple tidbits, drained
- 1 cup of chopped celery, sliced cucumber or jicama
- 3 tablespoons of salad oil
- 2 tablespoons of lemon juice
- 1/4 teaspoon of sea salt
- 5 tablespoons of mayonnaise
INSTRUCTIONS:
- Mix the chicken, pineapple, celery, oil, lemon juice and salt in a mixing bowl for 2 hours
- Before serving, mix with the mayonnaise. Serve on buns or in lettuce cups
