INGREDIENTS
4 boneless, skinless chicken breasts
1/3 cup of apple cider vinegar
2 unpeeled green apples, cut into 16 wedges
1/2 cup of chicken broth
2 tbsp of honey mustard
3 – 4 tbsp of breadcrumbs
salt and pepper
1 tbsp of corn starch
parsley (for garnish)
olive oil (for frying)
DIRECTIONS
- Combine the corn starch, apple cider vinegar, mustard, honey, salt, and pepper in a mixing bowl. Whisk until it’s well combined.
- Season the chicken, on both sides, with salt and pepper. Dredge it in the bread crumbs and set it aside on a plate.
- Heat the olive oil in a nonstick pan. Place the chicken in and cook until it’s golden brown on one side. This should take 4 minutes or so. Flip the chicken and allow it to cook for another 2 minutes. Add the apples and cook for an additional 2 minutes.
- Add in the broth. Allow it to simmer until the chicken and apples are fork tender. This should take about 10 – 12 minutes.
- Place the chicken and apples on a serving plate. Whisk the cider mixture and add it to the same pan. Cook it over medium high heat until slightly thick and bubbly. Do not stir or whisk the sauce as the vinegar needs to cook off. This should take 1 to 2 minutes. Spoon the sauce over the chicken and serve.
