Rosemary Chicken Salad Sandwiches Recipe


INGREDIENTS

3 cups cooked and shredded chicken breast, or leftover roast chicken breast (about 3/4 pounds)
1/3 cup chopped green onions
1/4 cup chopped walnuts, almonds or pecans
1 teaspoon chopped fresh rosemary
1/4 cup plain fat-free yogurt
1/4 cup light mayonnaise
1 teaspoon Dijon mustard
Salt and pepper to taste
10 sliced whole-grain bread

DIRECTIONS

  1. In a large bowl, combine the first 8 ingredients (from chicken breast to salt and pepepr), mix well to combine.
  2. Spread about 2/3 cups of chicken mixture onto the bread slices.
  3. Enjoy!
