INGREDIENTS
2 large green apples
juice of 1 lemon
1 cup oil
cooking spray
Ingredients for batter:
1 cup all-purpose flour
2 tbs cornstarch
1 tsp baking soda
1 egg, lightly beaten
1/2 cup water
Ingredients for syrup:
1 cup sugar
1/4 cup water
DIRECTIONS
- Peel and core apples, then slice into eight wedges. Place in a large bowl and toss with lemon juice. Set aside.
- Prepare batter by combining all ingredients in a bowl, add more water if need (you want consistency to be that of thick cream).
- Make syrup by heating sugar and water over medium heat. Once sugar dissolves, increase heat and boil without stirring. Continue to boil until golden, up to 10 minutes.
- While sugar is boiling, fill a large bowl halfway with ice, then fill completely with cold water. Place saucepan with sugar syrup in bowl of ice water once syrup is golden, to cool it down. Set on the back burner over low heat to keep warm.
- Heat oil in a wok over medium-high heat.
- Coat a serving dish with cooking spray.
- Dip apples into batter and deep-fry for about 30 seconds on each side. Remove and drain on paper towels. Dip fried apples in syrup with tongs coated with cooking spray. Dip quickly in ice water, and remove immediately. Place in serving dish and repeat process with all remaining apples; serve once complete.
