INGREDIENTS:
- 1 pound chicken breasts, cut into bite-sized pieces
- 14 ounces frozen broccoli, thawed
- 1/2 cup cheddar cheese
- 2 ounces cream cheese
- 2 cups chicken broth
- 1 cup rice
- 2 teaspoon dried thyme
- 1 teaspoon poultry seasoning
- 1 teaspoon garlic powder
INSTRUCTIONS:
- Preheat a large skillet coated with cooking spray over medium-high heat. Add chicken brown an on all sides.
- Add the chicken broth and bring a boil then reduce heat to a simmer. Stirring with a whisk, add the cream cheese until melted.
- Stir in the rice and bring to a boil. Reduce heat, cover, and simmer 15 to 20 minutes or until the rice is cooked through and tender.
- Stir in the broccoli and cheddar until the cheese is melted. Serve with a side salad and some crusty bread.
