Cheesy Broccoli Chicken & Rice Recipe


INGREDIENTS:

  • 1 pound chicken breasts, cut into bite-sized pieces
  • 14 ounces frozen broccoli, thawed
  • 1/2 cup cheddar cheese
  • 2 ounces cream cheese
  • 2 cups chicken broth
  • 1 cup rice
  • 2 teaspoon dried thyme
  • 1 teaspoon poultry seasoning
  • 1 teaspoon garlic powder

INSTRUCTIONS:

  1. Preheat a large skillet coated with cooking spray over medium-high heat. Add chicken brown an on all sides.
  2. Add the chicken broth and bring a boil then reduce heat to a simmer. Stirring with a whisk, add the cream cheese until melted.
  3. Stir in the rice and bring to a boil. Reduce heat, cover, and simmer 15 to 20 minutes or until the rice is cooked through and tender.
  4. Stir in the broccoli and cheddar until the cheese is melted. Serve with a side salad and some crusty bread.
