INGREDIENTS:
- 4 Medium Sweet Potatoes, uniform in width, ends trimmed & washed
- Oil for brushing the potatoes
- Coarse Salt
- 1/2 C Plum Sauce (found in the Asian section of most grocery stores)
- 1 Tbl of Lemon Juice
- 1 Tbl Brown Sugar
- 1/4 tsp Salt
- Freshly Steamed Green Beans for serving
INSTRUCTIONS:
- Preheat oven to 450 degrees.
- Meanwhile, wash the sweet potatoes and trim the ends off.
- Using a sharp knife, make 1/8" - 1/4" slices 3/4 of the way through the potato. Take care not to slice too far or it will not retain its shape.
- Place on a lined baking sheet.
- Brush with oil and a generous sprinkle of coarse salt.
- Bake for 25-30 minutes or until tender on the inside and the skin is crispy.
- In a small saucepan, combine the plum sauce, lemon juice, brown sugar and salt.
- Taste for seasoning.
- This sauce recipe makes about a half a cup but can easily be doubled if desired.
- Serve with brown rice or as we have here, with freshly steamed green beans, a dab of vegan margarine, salt and pepper.
- Serve immediately.
